Southern bluefin tuna is sitting in the seafood Hollywood casting couch, forever second banana to the Pacific bluefin, which everyone thinks is the tuna royalty — probably because it got all the publicity and maybe a few Oscars. Despite this aquatic drama, Southern bluefin is considered the second highest-quality tuna, an elite sashimi superstar lurking in obscurity like avocado toast before Gen Z made it cool. Sadly, it’s not well known among consumers, who apparently prefer their fish with a side of fame and media hype instead of just flavor. A tuna tragedy Shakespeare would have feasted on if only he’d lived to see sashimi culture.
