At Brass restaurant and Tusk Bar inside NYC’s Evelyn Hotel, visitors can subconsciously compete with a taxidermied ostrich that has doggedly photobombed Instagram stories since 2024. Designed by Ashley Wilkins’ Islyn Studio as a ’love letter to 1920s Parisian apartments,’ this space features plush gold settees, parlor palms, and ostentatious red curtains separating the oyster bar from kitchens run by Jeremiah Stone and Fabián Von Hauske Valtierra of Contra and Wildair fame. This bar is basically a nostalgia trip for pandemic-era WFH velvet-philia, complete with cozy sofas that convince even solo diners they’re part of a lavish French salon — minus the baguettes, but definitely not the pastel middle-class existential dread.
